Christmas evening meal Traditions and sweetmeat Ideas

Christmas is my family's favorite time of year. We have many Christmas traditions that we've developed over the years.  One is that each year one of us daughters (mother and sister-in-laws) is responsible for a part of the dinner.  My favorite part to make is the Christmas desserts.

Our family is large, there are five sisters, four brothers and both parents still living. We also have a lot of wives, husbands, nieces and nephews mixed in. When we get together there are twenty seven people.  Each year one of us cooks for a separate segment. We put the supper segments in a hat. After dinner, after all the dishes are done and we're relaxing we select what our dishes will be for the next year. The menu is broken up into appetizers, before and after supper drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two population are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after supper drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

Truffle Sauce

As I said earlier Christmas sweetmeat is my favorite. I start cooking about a week in advance. I know everybody's favorites, and like to add a few new things.  I like to make lots of separate types of desserts for the family. One of my favorites is Black bottom Cup Cakes. Other is Greek Almond Cookies. These are super simple. Other favorite is right on a Red Velvet Cake with Butter Cream Icing. It's my Grandmother's method and the family loves it. The Red Velvet Cake is the one thing we're guaranteed to have every year, regardless of who is assigned sweetmeat duty.

I also make a Cinnamon Crumb Cake, a Chocolate Truffle with Raspberry Sauce and a Louisiana Roasted Pecan Pie.  All of these things make quite an impressive looking Christmas sweetmeat buffet and everybody is able to find something that they in effect like.

Over the years we girls have shared recipes in the middle of us.  We all love cooking, us sisters were all raised to enjoy being in the kitchen.  When a new item is introduced to the table there is also a menu card for each sister for that new item.  When I added Greek Almond Cookies to the sweetmeat table last year everybody was amazed how easy the method is. I got it from an actual Greek friend, Valerie.  The Cinnamon Crumb Cake is also easy to make and goes in effect well with a cup of coffee after dinner.

One year when my sister-in-law picked the Christmas sweetmeat measure of our meal I gave her a lot of guidance on recipes as she in effect isn't comfortable baking. I went to her home two days before Christmas and helped her make the former Red Velvet Cake. She did it in effect well and is now a pro!

Perhaps if you have a large family you can do something like our family does. We all enjoy our Christmas cooking tradition.

Anyone braving the shopping malls during the holiday season knows that seeing the perfect gift for house or friends is not easy. Company gift-giving can be even more challenging. Selecting the right Company gift requires more time and thoughtfulness. How do you go about Selecting exactly the right gift for that important client? Here are some time-honored rules of thumb.

- Reject run-of-the-mill. Shun the ho hum food baskets and opt for a more memorable gift. Check your client notes. What are his hobbies? Does he golf, cook or play sports? If your client, the gourmet cook, is still raving about the meals he enjoyed during his vacation in Tuscany, send him a beautifully visible regional cookbook. Your gift, and you, will be remembered far longer than a generic tin of cookies.

A small box of exquisite, handmade truffles will be appreciated far more than a big box of run-of-the-mill chocolates. gourmet coffees and teas, crystal items and potted plants are regularly a hit. Remember, a saleswoman may send more personal items-aromatherapy candles, a spa kit-to her stressed-out female clients, but salesmen should not be so familiar. Sorry guys-that is life. You are not in the club.

- Men love gadgets, toys and food. Think of the newest electronics, or a clever desktop novelty. High-quality pens, nuts or jellybeans also score very with men. Cigars are a great idea if you know he smokes them. Once again, think quality, not quantity. It's far good to send a few of the very best than a box of duds he will throw away.

- Think regional. reconsider sending a gift from your region of the country: Ghirardelli chocolate from San Francisco, smoked salmon from the Northwest, cheese from Wisconsin, citrus fruit from Florida or California, authentic Cajun fixin's from Louisiana, or barbecue sauce from Texas. If you do rule to mail cookies, pick out ones that do not break easily, like drop cookies. Pack them in foil-lined tin or small box. Put sheets of wax paper between the layers of cookies. cushion the tin or box of cookies within the shipping box with plastic grocery sacks (or other such material). Mark the box with "perishable - food." Also write on the top, "this side up" to encourage true handling.

· If you are sending other items along with your chocolate, place your chocolate in a zip-lock bag (and suck out all the air) to make sure that in case it does melt, nothing else is ruined.

· Pay a little extra to send your chocolate overnight, or at least send it 2-3 day priority. The sooner it gets there, the less likely it will melt, first.

· Make sure that the recipient will be home when it is received. If your box has to wait on the doorstop in the hot sun, the chocolate will positively melt! Maybe even ask for a signature.

· If it is not a delicate chocolate, ice it before you box it up to mail it. It will not stay frozen, but it will take longer for your chocolate gifts to melt.

· Pack your chocolate gifts with icy gel packs, dry ice, or another cold source. If you use dry ice, write on the box "contains dry ice" to warn the recipients. Be sure to pack the chocolate in a zip lock bag so that it does not directly touch the dry ice, and do not touch the ice with your own hands. Write "keep refrigerated" on the surface of the box.

· Send your chocolate gift package at the starting of the week to ensure that it will not sit at the mailing installation over the weekend.

· Send chocolate that is already melted! In other words, why not send a yummy chocolate sauce or chocolate for fondue!
