5 ounces semisweet baking chocolate

3 ounces unsweetened baking chocolate

1/2 cup heavy cream

2 tablespoons creme de menthe

3 tablespoons butter

3 cups dark chocolate bark

Line a baking dish with plastic wrap, then grease the wrap (preferably with butter, for the sake of taste).

Chop baking chocolate as finely as you can. In a small saucepan, heat cream over medium high heat until simmering. Pour hot cream into a food processor and result with butter and chopped baking chocolate. Process until smooth. Add creme de menthe just before you desist processing. Pour chocolate aggregate into the lined baking pan and refrigerate until cool and stiff, practically three to four hours.

Remove the block of chocolate from the baking pan and discard plastic wrap. Place block of chocolate truffle aggregate on a cutting block and slice squares practically the size desired for each truffle. Fast roll each square into a ball, touching the chocolate as slight as possible (so the chocolate does not melt). Refrigerate truffles immediately.

Melt dark chocolate bark in a small saucepan. Dip refrigerated truffles, return to a plate lined with wax paper and return to refrigerator.

Decorating Your Mint Chocolate Truffles

To decorate mint chocolate truffles, melt almond bark and dip the tips of the refrigerated truffles. Sprinkle the wet almond bark with green decorating sugar or adhere a tiny piece of fresh mint leaf to the top of the truffle.

It was easy to find, right across the street from the train station in a big building. We just had to walk down the street, cross the footbridge and there we were. We saw signs for the restaurant first that pointed us in the right direction, but when we went to were the enterance was it was just a little wooden door. Very sneaky. It was closed at that moment, so we wandered around a bit. When we walked back to see if they were open yet the door was open with a little banner and a maitre d' (I think) ushered us inside. We waited in a little wooden room with no visible doors, then the hostess clapped her hands and our ninja waitress popped out of a little door in the wall. She walked behind us and tapped a wooden pannel and a door opened up. It was very dark inside and we had to keep up with our ninja waitress through a twisting path with a cute little stream next to it. The ceiling was of various heights, I was just trying to immitate the ninja (if she ducked I did), I didn't get hit my head much (poor Chris, did, though).
